Side Dishes
2 cups brown or white rice cooked and chilled
1 can(19 oz./540 mL chick peas
1 large tomato cubed
1 carrot shredded
1 green onion chopped
1/2 cup fresh parsely chopped
3 tbsp fresh lemon juice
3 tbsp olive oil
In medium bowl, combine rice, chick peas, tomato,carrot, green onion and parsley.
Prepare dressing by blending lemon juice and olive oil; pour over salad mixture. Season to taste with salt and pepper.
Per Serving: about 250 calories, 6.5 g protein, 8.2 g fat, 38.7 g carbohydrate, 5.0 g dietary fibre.
